Salmon Southwest Salad

Ingredients

  • 1 lb skinless salmon fillets
  • 1 Tbsp less sodium taco seasoning mix
  • 1 Tbsp olive oil
  • 1 (10.3-oz) Southwest salad kit
  • 1 (5-oz) pkg spinach

Instructions

  1. Sprinkle fish with seasoning mix. Cook fish in hot oil in a large nonstick skillet over medium-high heat 4 minutes per side or to desired doneness.
  2. Meanwhile, prepare salad kit according to package directions in a large bowl. Add spinach; toss. Flake fish into large pieces; add to salad in bowl. Toss again, and serve immediately.
