Chicken and Bacon Cauli Mac 'n Cheese

Ingredients
- 6 cups cauliflower florets
- 8 slices center cut bacon
- 2 Tbsp butter
- 1 Tbsp all purpose flour
- 1 tsp onion powder
- ½ tsp pepper
- 1 cup reduced fat milk
- 1½ cups shredded reduced fat Cheddar cheese, divided
- 1 cup shredded reduced fat Colby Jack cheese, divided
- ½ cup reduced fat Ranch dressing
- 2 cups shredded rotisserie chicken
- ⅓ cup chopped fresh parsley
Instructions
- Preheat oven to 375°F. Cook cauliflower in a large pot of boiling water 5 minutes or until slightly tender. Drain; set aside.
- Meanwhile, cook bacon in a large skillet over medium heat 6 to 8 minutes or until crisp. Crumble bacon.
- Melt butter over medium heat in a medium saucepan. Stir in flour, onion powder, and pepper until smooth. Gradually whisk in milk. Bring to a boil, stirring constantly; cook, stirring, 1 to 2 minutes or until thickened. Stir in 1 cup Cheddar, ¾ cup Colby-Jack, and Ranch dressing.
- Add cauliflower, chicken, and three-fourths of the crumbled bacon to sauce, tossing to combine. Transfer to a 13- x 9-inch baking dish coated with cooking spray.
- Top with ½ cup Cheddar, ¼ cup colby-Jack cheese, and remaining bacon.
- Bake 30 to 35 minutes or until cheese is lightly browned. Sprinkle with parsley, if desired.
