Chicken and Bacon Cauli Mac 'n Cheese

Ingredients

  • 6 cups cauliflower florets 
  • 8 slices center cut bacon
  • 2 Tbsp butter
  • 1 Tbsp all purpose flour
  • 1 tsp onion powder
  • ½ tsp pepper
  • 1 cup reduced fat milk
  • 1½ cups shredded reduced fat Cheddar cheese, divided
  • 1 cup shredded reduced fat Colby Jack cheese, divided
  • ½ cup reduced fat Ranch dressing
  • 2 cups shredded rotisserie chicken
  • ⅓ cup chopped fresh parsley

Instructions

  1. Preheat oven to 375°F. Cook cauliflower in a large pot of boiling water 5 minutes or until slightly tender. Drain; set aside.
  2. Meanwhile, cook bacon in a large skillet over medium heat 6 to 8 minutes or until crisp. Crumble bacon.
  3. Melt butter over medium heat in a medium saucepan. Stir in flour, onion powder, and pepper until smooth. Gradually whisk in milk. Bring to a boil, stirring constantly; cook, stirring, 1 to 2 minutes or until thickened. Stir in 1 cup Cheddar, ¾ cup Colby-Jack, and Ranch dressing.
  4. Add cauliflower, chicken, and three-fourths of the crumbled bacon to sauce, tossing to combine. Transfer to a 13- x 9-inch baking dish coated with cooking spray.
  5. Top with ½ cup Cheddar, ¼ cup colby-Jack cheese, and remaining bacon.
  6. Bake 30 to 35 minutes or until cheese is lightly browned. Sprinkle with parsley, if desired.
