Spicy Cucumber-Basil Salad

Ingredients

  • ½ cup thinly sliced red onion
  • 1 Tbsp minced ginger
  • 1 jalapeno pepper, seeded and minced
  • 1 Tbsp sesame oil
  • 1½ (20-oz) pkg ground turkey
  • ½ cup fresh lime juice
  • 2 Tbsp fish sauce
  • 2 Tbsp raw honey
  • ½ cup chopped fresh cilantro
  • ¼ cup chopped fresh mint
  • 1 small head cabbage, leaves separated

Instructions

  1. Sauté onion, ginger, and jalapeño in hot oil in a large skillet over medium-high heat 3 minutes. Add turkey; cook 8 minutes or until browned and crumbly.
  2. Stir in lime juice, fish sauce, and honey; cook 1 minute. Stir in cilantro and mint. Serve turkey mixture in cabbage leaves.

Side Dish Ingredients

  • 3 Tbsp natural rice vinegar
  • 2 tsp raw honey
  • ⅛ tsp crushed red pepper
  • 2 large English cucumbers, thinly sliced
  • ½ cup chopped fresh basil

Side Dish Instructions

  1. Whisk together vinegar, honey, and red pepper in a bowl. Add cucumbers and basil; toss. Season with salt, if desired.
