Beef Bolognese
Garlic Mashed CauliflowerIngredients
- 1¾ lb grass fed ground beef
- 2 (28-oz) cans diced tomatoes
- ¼ cup organic tomato paste
- 2 eggplants, chopped
- 2 carrots, chopped
- 1 onion, diced
- 4 cloves garlic, minced
- 2 Tbsp balsamic vinegar
- 2 Tbsp Italian seasoning
- ½ tsp crushed red pepper
- 2 bay leaves
Instructions
- Cook beef in a large skillet over medium heat until browned and crumbly; drain. Transfer to a 4- to 6-quart slow cooker.
- Add tomatoes, tomato paste, eggplants, carrots, onion, garlic, vinegar, Italian seasoning, red pepper, and bay leaves.
- Cover and cook on LOW 6 to 8 hours or until vegetables are tender.
- Season with salt and pepper, if desired. Discard bay leaves before serving.
Side Dish Ingredients
- 1 (12-oz) pkg cauliflower florets
- ¼ cup extra virgin olive oil
- 1 clove garlic, mashed
- ½ tsp salt
- ½ tsp pepper
Side Dish Instructions
- Cook cauliflower in boiling water 10 minutes or until tender; drain well. Return cauliflower to pot over low heat.
- Stir in oil, garlic, salt, and pepper. Mash with a potato masher until smooth.
