Beef Bolognese

Garlic Mashed Cauliflower

Ingredients

  • 1¾ lb grass fed ground beef
  • 2 (28-oz) cans diced tomatoes
  • ¼ cup organic tomato paste
  • 2 eggplants, chopped
  • 2 carrots, chopped
  • 1 onion, diced
  • 4 cloves garlic, minced
  • 2 Tbsp balsamic vinegar
  • 2 Tbsp Italian seasoning
  • ½ tsp crushed red pepper
  • 2 bay leaves

Instructions

  1. Cook beef in a large skillet over medium heat until browned and crumbly; drain. Transfer to a 4- to 6-quart slow cooker.
  2. Add tomatoes, tomato paste, eggplants, carrots, onion, garlic, vinegar, Italian seasoning, red pepper, and bay leaves.
  3. Cover and cook on LOW 6 to 8 hours or until vegetables are tender.
  4. Season with salt and pepper, if desired. Discard bay leaves before serving.

  • 1 (12-oz) pkg cauliflower florets
  • ¼ cup extra virgin olive oil
  • 1 clove garlic, mashed
  • ½ tsp salt
  • ½ tsp pepper

Side Dish Instructions

  1. Cook cauliflower in boiling water 10 minutes or until tender; drain well. Return cauliflower to pot over low heat.
  2. Stir in oil, garlic, salt, and pepper. Mash with a potato masher until smooth.
