Cajun Chicken and Vegetables

Ingredients

  • 6 boneless, skinless chicken breasts
  • 1 tsp salt
  • ½ tsp pepper
  • 1 Tbsp Cajun seasoning
  • 3 Tbsp coconut oil, divided
  • 2 cloves garlic, minced
  • 1 cup frozen seasoning blend
  • 3 large beefsteak tomatoes, chopped

Instructions

  1. Sprinkle chicken with salt, pepper, and Cajun seasoning. Brown chicken in 2 Tbsp hot oil in a large, deep skillet over medium-high heat 2 minutes per side; remove from skillet.
  2. Add 1 Tbsp oil, garlic, seasoning blend, and tomatoes to skillet; sauté 3 minutes or until tender and slightly thickened.
  3. Return chicken to skillet; cover and simmer 10 to 12 minutes or until chicken is done.

Side Dish Ingredients

  • 2 cloves garlic, minced
  • 2 Tbsp coconut oil
  • 2 Tbsp chicken broth
  • 1 tsp apple cider vinegar
  • 1 tsp salt
  • ½ tsp pepper
  • 2 (10-oz) pkg baby spinach

Side Dish Instructions

  1. Sauté garlic in hot oil in a large skillet over medium heat 2 minutes; reduce heat to low. Add broth, vinegar, salt, and pepper; gradually add spinach.
  2. Cook 4 to 5 minutes or until spinach is wilted.
