Cajun Chicken and Vegetables
Easy Spinach SautéIngredients
- 6 boneless, skinless chicken breasts
- 1 tsp salt
- ½ tsp pepper
- 1 Tbsp Cajun seasoning
- 3 Tbsp coconut oil, divided
- 2 cloves garlic, minced
- 1 cup frozen seasoning blend
- 3 large beefsteak tomatoes, chopped
Instructions
- Sprinkle chicken with salt, pepper, and Cajun seasoning. Brown chicken in 2 Tbsp hot oil in a large, deep skillet over medium-high heat 2 minutes per side; remove from skillet.
- Add 1 Tbsp oil, garlic, seasoning blend, and tomatoes to skillet; sauté 3 minutes or until tender and slightly thickened.
- Return chicken to skillet; cover and simmer 10 to 12 minutes or until chicken is done.
Side Dish Ingredients
- 2 cloves garlic, minced
- 2 Tbsp coconut oil
- 2 Tbsp chicken broth
- 1 tsp apple cider vinegar
- 1 tsp salt
- ½ tsp pepper
- 2 (10-oz) pkg baby spinach
Side Dish Instructions
- Sauté garlic in hot oil in a large skillet over medium heat 2 minutes; reduce heat to low. Add broth, vinegar, salt, and pepper; gradually add spinach.
- Cook 4 to 5 minutes or until spinach is wilted.
