Ingredients

  • 2 lb bone in, skin on chicken breasts
  • 1 tsp paprika
  • ½ tsp salt
  • ½ tsp pepper
  • ⅓ cup olive oil mayonnaise
  • 2 Tbsp natural rice vinegar
  • 1 Tbsp fresh lemon juice
  • ¼ tsp cayenne pepper

Instructions

  1. Preheat grill to medium-high heat. Use paper towels to grip and remove chicken skin. Rub chicken with paprika, salt, and pepper; place on a greased grill rack.
  2. Grill 7 to 8 minutes per side or until chicken is done. Cut chicken into serving-size pieces.
  3. Meanwhile, combine mayonnaise, vinegar, lemon juice, and cayenne pepper; serve with chicken.

  • 6 ears corn, shucked and cleaned
  • 3 Tbsp olive oil, divided
  • 3 Tbsp chopped fresh basil
  • 1 tsp salt, divided
  • ½ tsp freshly ground pepper, divided
  • 3 tomatoes, cut into wedges
  • 1 organic English cucumber, cut into chunks
  • 1 (4-oz) pkg crumbled feta cheese

Side Dish Instructions

  1. Preheat grill to medium-high heat. Rub corn with 2 Tbsp oil; sprinkle with basil, ½ tsp salt and ¼ tsp pepper.
  2. Grill 12 minutes, turning occasionally.
  3. Toss tomatoes and cucumber with 1 Tbsp oil; sprinkle with ½ tsp salt, ¼ tsp pepper, and cheese.
