White Barbecue Sauce Grilled Chicken
Herb-Grilled Corn and Tomato-Cucumber Toss

Ingredients
- 2 lb bone in, skin on chicken breasts
- 1 tsp paprika
- ½ tsp salt
- ½ tsp pepper
- ⅓ cup olive oil mayonnaise
- 2 Tbsp natural rice vinegar
- 1 Tbsp fresh lemon juice
- ¼ tsp cayenne pepper
Instructions
- Preheat grill to medium-high heat. Use paper towels to grip and remove chicken skin. Rub chicken with paprika, salt, and pepper; place on a greased grill rack.
- Grill 7 to 8 minutes per side or until chicken is done. Cut chicken into serving-size pieces.
- Meanwhile, combine mayonnaise, vinegar, lemon juice, and cayenne pepper; serve with chicken.
Side Dish Ingredients
- 6 ears corn, shucked and cleaned
- 3 Tbsp olive oil, divided
- 3 Tbsp chopped fresh basil
- 1 tsp salt, divided
- ½ tsp freshly ground pepper, divided
- 3 tomatoes, cut into wedges
- 1 organic English cucumber, cut into chunks
- 1 (4-oz) pkg crumbled feta cheese
Side Dish Instructions
- Preheat grill to medium-high heat. Rub corn with 2 Tbsp oil; sprinkle with basil, ½ tsp salt and ¼ tsp pepper.
- Grill 12 minutes, turning occasionally.
- Toss tomatoes and cucumber with 1 Tbsp oil; sprinkle with ½ tsp salt, ¼ tsp pepper, and cheese.
