Skirt Steak with Peanut Sauce

Ingredients
- 1½ lb skirt steak
- ¾ tsp salt
- 1 tsp pepper
- ¾ cup coconut milk
- ⅓ cup natural peanut butter
- 1 Tbsp fresh lime juice
- 1 Tbsp low sodium soy sauce
- ½ tsp Sriracha
Instructions
- Preheat grill to medium-high heat. Sprinkle steak with salt and pepper. Grill 4 to 5 minutes per side or to desired doneness. Let stand 10 minutes before thinly slicing across the grain.
- Meanwhile, whisk together coconut milk, peanut butter, lime juice, soy sauce, and, if desired, Sriracha. Serve sauce with steak.

- 1 (12.8-oz) pkg buckwheat soba noodles
- ¼ cup natural rice vinegar
- 2 Tbsp low sodium soy sauce
- 2 Tbsp olive oil
- 1 cup thinly sliced radishes
- 2 Tbsp chopped fresh cilantro
Side Dish Instructions
- Cook noodles according to package directions; drain and rinse with cold water to cool.
- Whisk together vinegar, soy sauce, and oil; pour over noodles. Add radishes and cilantro; toss.
