Ingredients

  • 1½ lb skirt steak
  • ¾ tsp salt
  • 1 tsp pepper
  • ¾ cup coconut milk
  • ⅓ cup natural peanut butter
  • 1 Tbsp fresh lime juice
  • 1 Tbsp low sodium soy sauce
  • ½ tsp Sriracha

Instructions

  1. Preheat grill to medium-high heat. Sprinkle steak with salt and pepper. Grill 4 to 5 minutes per side or to desired doneness. Let stand 10 minutes before thinly slicing across the grain.
  2. Meanwhile, whisk together coconut milk, peanut butter, lime juice, soy sauce, and, if desired, Sriracha. Serve sauce with steak.

  • 1 (12.8-oz) pkg buckwheat soba noodles
  • ¼ cup natural rice vinegar
  • 2 Tbsp low sodium soy sauce
  • 2 Tbsp olive oil
  • 1 cup thinly sliced radishes
  • 2 Tbsp chopped fresh cilantro

Side Dish Instructions

  1. Cook noodles according to package directions; drain and rinse with cold water to cool.
  2. Whisk together vinegar, soy sauce, and oil; pour over noodles. Add radishes and cilantro; toss.
