Balsamic London Broil
Steamed Asparagus and Wild Rice

Ingredients
- 2 sweet onions, thinly sliced
- 2 lb London broil, trimmed
- ¼ cup balsamic vinegar
- 2 Tbsp low sodium soy sauce
- 2 Tbsp whole grain mustard
- 4 cloves garlic, minced
- 2 tsp pepper
- 3 sprigs fresh rosemary
Instructions
- Place onions in a 5- or 6-quart slow cooker. Top with steak, vinegar, soy sauce, mustard, garlic, pepper, and rosemary.
- Cover and cook on LOW 8 hours or until steak is tender.

- 1½ cups wild rice
- 2 Tbsp butter, divided
- ½ tsp salt, divided
- ½ tsp pepper, divided
- 1½ lb asparagus, trimmed
- ¼ cup water
Side Dish Instructions
- Cook rice according to package directions; stir in 1 Tbsp butter and ¼ tsp each salt and pepper.
- Place asparagus in a microwave-safe dish with water; cover dish with plastic wrap, and vent one corner.
- Microwave at HIGH 4 to 5 minutes or until asparagus is tender. Drain and stir in 1 Tbsp butter and ¼ tsp each salt and pepper.
