Moroccan Chickpea Couscous

Ingredients
- 2 (10-oz) pkg whole wheat couscous
- 2 (15-oz) cans no salt added chickpeas, drained and rinsed
- ¼ cup chopped fresh cilantro
- ¼ cup fresh lemon juice
- ¼ cup olive oil
- 1 Tbsp ground cumin
- 1 tsp paprika
- ½ tsp cayenne pepper
- ½ tsp salt
- ¼ tsp pepper
- 2 cloves garlic, minced
Instructions
- Cook couscous according to package directions; stir in chickpeas and cilantro.
- Combine lemon juice, oil, cumin, paprika, cayenne pepper, salt, pepper, and garlic in a small bowl; whisk until blended. Pour dressing over couscous; toss. Let stand 10 to 15 minutes before serving.
Side Dish Ingredients
- 4 large carrots, shredded
- ½ cup organic raisins
- ⅓ cup olive oil mayonnaise
- ¼ cup apple cider vinegar
- 2 Tbsp honey
- ½ tsp salt
- ½ tsp pepper
Side Dish Instructions
- Combine carrots, raisins, mayonnaise, vinegar, honey, salt, and pepper in a large bowl; stir until blended. Chill 1 hour before serving.
