Ingredients

  • 2 (10-oz) pkg whole wheat couscous
  • 2 (15-oz) cans no salt added chickpeas, drained and rinsed
  • ¼ cup chopped fresh cilantro
  • ¼ cup fresh lemon juice
  • ¼ cup olive oil
  • 1 Tbsp ground cumin
  • 1 tsp paprika
  • ½ tsp cayenne pepper
  • ½ tsp salt
  • ¼ tsp pepper
  • 2 cloves garlic, minced

Instructions

  1. Cook couscous according to package directions; stir in chickpeas and cilantro.
  2. Combine lemon juice, oil, cumin, paprika, cayenne pepper, salt, pepper, and garlic in a small bowl; whisk until blended. Pour dressing over couscous; toss. Let stand 10 to 15 minutes before serving.

  • 4 large carrots, shredded
  • ½ cup organic raisins
  • ⅓ cup olive oil mayonnaise
  • ¼ cup apple cider vinegar
  • 2 Tbsp honey
  • ½ tsp salt
  • ½ tsp pepper

Side Dish Instructions

  1. Combine carrots, raisins, mayonnaise, vinegar, honey, salt, and pepper in a large bowl; stir until blended. Chill 1 hour before serving.
