Chicken with Zucchini and Summer Squash
Orzo with Spinach
Ingredients
- ¼ cup butter, divided
- 2 lb boneless, skinless chicken thighs
- ½ tsp dried thyme
- ½ tsp salt, divided
- ½ tsp pepper, divided
- 3 zucchini, sliced
- 3 yellow squash, sliced
- 4 cloves garlic, minced
- Fresh basil leaves
Instructions
- Melt 2 Tbsp butter in a large skillet over medium-high heat. Sprinkle chicken with thyme and ¼ tsp each salt and pepper. Cook chicken, in batches, in melted butter 5 to 6 minutes per side or until done.
- Meanwhile, melt 2 Tbsp butter in a large skillet over medium-high heat. Add zucchini, squash, garlic, and ¼ tsp each salt and pepper; sauté 8 to 10 minutes or until vegetables are browned and tender. Serve chicken and vegetables over Orzo with Spinach recipe. Sprinkle with basil, if desired.

- 1½ tsp olive oil
- 1 (5-oz) pkg baby spinach
- ¼ cup freshly grated Parmesan cheese
- ¼ tsp salt
- ⅛ tsp pepper
Side Dish Instructions
- Cook orzo according to package directions.
- Meanwhile, sauté garlic in hot oil in a large nonstick skillet over medium heat 1 minute. Add spinach; cook 2 minutes or until wilted. Stir in orzo, cheese, salt, and pepper.
