Ingredients
- 2 limes, divided
- ¼ cup mayonnaise
- ½ Tbsp chili powder
- ¾ lb boneless, skinless chicken breasts
- ¼ tsp salt
- ¼ tsp pepper
- 1 Tbsp olive oil
- ¼ cup crumbled feta cheese
Instructions
- Grate zest and squeeze juice from 1 lime. Stir together lime juice, mayonnaise, and chili powder in a small bowl; set aside.
- Cut chicken in half crosswise, and pound to an even thickness between plastic wrap using a meat mallet; sprinkle with salt and pepper.
- Cook chicken in hot oil in a nonstick skillet over medium-high heat 5 to 6 minutes per side or until done.
- Drizzle chicken with mayonnaise mixture, and sprinkle with cheese. Cut 1 lime into wedges, and serve with chicken.

- ¾ lb sweet potatoes, peeled and cut into 1 inch pieces
- 1 Tbsp olive oil, divided
- ¼ tsp salt, divided
- ¼ tsp pepper, divided
- ½ head broccoli, cut into florets
- 2 Tbsp chopped fresh cilantro
- 1 Tbsp lime juice
Side Dish Instructions
- Preheat oven to 400°F. Toss together potatoes, ½ Tbsp oil, and ⅛ tsp each salt and pepper on a rimmed baking sheet; spread in a single layer. Bake 15 minutes.
- Toss together broccoli, ½ Tbsp oil, and ⅛ tsp each salt and pepper; add to baking sheet with potatoes.
- Bake 15 minutes longer or until potatoes are tender. Sprinkle vegetables with cilantro and lime juice.
