Ingredients

  • 2 limes, divided
  • ¼ cup mayonnaise
  • ½ Tbsp chili powder
  • ¾ lb boneless, skinless chicken breasts
  • ¼ tsp salt
  • ¼ tsp pepper
  • 1 Tbsp olive oil
  • ¼ cup crumbled feta cheese

Instructions

  1. Grate zest and squeeze juice from 1 lime. Stir together lime juice, mayonnaise, and chili powder in a small bowl; set aside.
  2. Cut chicken in half crosswise, and pound to an even thickness between plastic wrap using a meat mallet; sprinkle with salt and pepper.
  3. Cook chicken in hot oil in a nonstick skillet over medium-high heat 5 to 6 minutes per side or until done.
  4. Drizzle chicken with mayonnaise mixture, and sprinkle with cheese. Cut 1 lime into wedges, and serve with chicken.

Side Dish Ingredients

  • ¾ lb sweet potatoes, peeled and cut into 1 inch pieces
  • 1 Tbsp olive oil, divided
  • ¼ tsp salt, divided
  • ¼ tsp pepper, divided
  • ½ head broccoli, cut into florets
  • 2 Tbsp chopped fresh cilantro 
  • 1 Tbsp lime juice

Side Dish Instructions

  1. Preheat oven to 400°F. Toss together potatoes, ½ Tbsp oil, and ⅛ tsp each salt and pepper on a rimmed baking sheet; spread in a single layer. Bake 15 minutes.
  2. Toss together broccoli, ½ Tbsp oil, and ⅛ tsp each salt and pepper; add to baking sheet with potatoes.
  3. Bake 15 minutes longer or until potatoes are tender. Sprinkle vegetables with cilantro and lime juice.
