Ingredients

  • 1 (16-oz) pkg whole grain rotini
  • 2 avocados, coarsely chopped
  • 3 Tbsp lemon juice
  • 3 Tbsp nutritional yeast
  • 2 cloves garlic
  • ½ tsp salt
  • ½ tsp pepper
  • ½ cup shredded vegetarian Parmesan cheese

Instructions

  1. Cook pasta according to package directions; drain, reserving ½ cup pasta water.
  2. Process avocados, lemon juice, nutritional yeast, garlic, salt, and pepper in a food processor until smooth.
  3. Cook avocado mixture, pasta, and pasta water in a Dutch oven over medium heat 5 minutes. Season with salt and pepper, if desired. Sprinkle with cheese.
