Avocado Alfredo

Ingredients
- 1 (16-oz) pkg whole grain rotini
- 2 avocados, coarsely chopped
- 3 Tbsp lemon juice
- 3 Tbsp nutritional yeast
- 2 cloves garlic
- ½ tsp salt
- ½ tsp pepper
- ½ cup shredded vegetarian Parmesan cheese
Instructions
- Cook pasta according to package directions; drain, reserving ½ cup pasta water.
- Process avocados, lemon juice, nutritional yeast, garlic, salt, and pepper in a food processor until smooth.
- Cook avocado mixture, pasta, and pasta water in a Dutch oven over medium heat 5 minutes. Season with salt and pepper, if desired. Sprinkle with cheese.
