Sheet Pan Spicy Chicken and Broccoli

Bibb Lettuce with Lime Vinaigrette

Ingredients

  • 1½ lb boneless, skinless chicken breasts, cut into bite size pieces
  • 1 head broccoli, cut into florets
  • 1 (0.6-oz) envelope zesty Italian dressing mix
  • ½ cup butter, melted
  • ½ tsp crushed red pepper
  • 1 lemon, thinly sliced
  • ¾ cup freshly grated Parmesan cheese

Instructions

  1. Preheat oven to 450°F. Toss together chicken, broccoli, dressing mix, butter, and red pepper in a large bowl.
  2. Arrange lemon slices on a large parchment paper-lined rimmed baking sheet; pour chicken mixture over lemons, and spread in an even layer.
  3. Bake 15 to 20 minutes or until chicken is done; sprinkle with cheese.

  • ⅛ tsp salt
  • 1 clove garlic, minced
  • 2 heads Bibb lettuce, torn
