Ingredients

  • ¾ cup chopped red onion
  • 2 Tbsp olive oil
  • 6 burrito size flour tortillas
  • 3 cups spinach
  • 1 (14-oz) can quartered artichoke hearts, well drained
  • 3 Roma tomatoes, sliced
  • 1 (8-oz) block mozzarella cheese, shredded
  • 1 cup crumbled feta cheese

Instructions

  1. Preheat oven to 425°F. Cook onion in hot oil in a large skillet over medium-high heat 6 minutes or until lightly browned and tender.
  2. Arrange tortillas on 2 large baking sheets; coat with cooking spray. Flip tortillas over. Place spinach on one half of each tortilla. Top with onion, artichokes, tomatoes, mozzarella, and feta; fold tortillas over filling. Coat tops with cooking spray.
  3. Bake 6 minutes. Flip quesadillas; bake 6 to 7 minutes longer or until lightly browned. Cut into wedges.
