Ingredients
- ¾ cup chopped red onion
- 2 Tbsp olive oil
- 6 burrito size flour tortillas
- 3 cups spinach
- 1 (14-oz) can quartered artichoke hearts, well drained
- 3 Roma tomatoes, sliced
- 1 (8-oz) block mozzarella cheese, shredded
- 1 cup crumbled feta cheese
Instructions
- Preheat oven to 425°F. Cook onion in hot oil in a large skillet over medium-high heat 6 minutes or until lightly browned and tender.
- Arrange tortillas on 2 large baking sheets; coat with cooking spray. Flip tortillas over. Place spinach on one half of each tortilla. Top with onion, artichokes, tomatoes, mozzarella, and feta; fold tortillas over filling. Coat tops with cooking spray.
- Bake 6 minutes. Flip quesadillas; bake 6 to 7 minutes longer or until lightly browned. Cut into wedges.
