Mozzarella- and Mushroom-Topped Chicken

Ingredients

  • 1 lb boneless, skinless chicken breasts
  • 1 Tbsp olive oil
  • 2 Tbsp butter
  • ½ (8-oz) pkg sliced mushrooms
  • ½ cup shredded whole milk mozzarella cheese

Instructions

  1. Pound chicken to an even thickness in a zip-top plastic bag using the heel of your hand or a meat mallet. Cut chicken into 3 pieces; season lightly with salt and pepper, if desired.
  2. Cook chicken in hot oil in a large nonstick skillet over medium-high heat 4 to 5 minutes per side or until done; remove from skillet, and keep warm.
  3. Melt butter in same skillet over medium-high heat; add mushrooms, and cook 5 to 6 minutes or until browned. Spoon mushroom mixture over chicken; sprinkle with cheese. Let stand until cheese is melted.

Side Dish Ingredients

  • 3 cups chopped kale
  • ½ (10-oz) pkg angel hair coleslaw
  • ⅓ cup green goddess dressing
  • 1 Tbsp lemon juice

Side Dish Instructions

  1. Toss together all ingredients in a bowl.
