Meatball Banh Mi Sandwiches

Ingredients

  • 1 (28-oz) pkg frozen meatballs
  • 1 (10-oz) pkg angel hair coleslaw
  • 1 (10-oz) pkg shredded carrots
  • 1 cup coarsely chopped fresh cilantro
  • 1 Tbsp dark sesame oil
  • 1 Tbsp natural rice vinegar
  • ½ cup mayonnaise
  • 2 Tbsp Sriracha
  • 6 sub rolls, split and toasted

Instructions

  1. Bake meatballs according to package directions.
  2. Meanwhile, toss together coleslaw, carrots, cilantro, oil, and vinegar in a large bowl.
  3. Stir together mayonnaise and Sriracha. Spread mixture on cut side of rolls. Serve meatballs on rolls with coleslaw.

Side Dish Ingredients

  • 1 (28-oz) pkg frozen French fries
  • 2 cloves garlic, minced
  • 2 Tbsp olive oil
  • 2 to 3 Tbsp Sriracha
  • ½ cup chopped salted peanuts
  • ¼ cup chopped fresh cilantro

Side Dish Instructions

  1. Bake fries according to package directions.
  2. Meanwhile, cook garlic in hot oil in a small skillet over medium heat 1 minute.
  3. Place fries on a large platter. Drizzle fries with garlic oil and hot sauce; top with nuts and cilantro.
