Spanish Shrimp and Chorizo Rice

Ingredients

  • 1½ lb peeled and deveined, large raw shrimp
  • ½ tsp salt
  • ½ tsp pepper
  • 2 Tbsp olive oil
  • ½ (16-oz) pkg ground chorizo sausage
  • 3 cloves garlic, minced
  • 1 pint grape tomatoes
  • ½ cup pitted Castelvetrano olives
  • ½ cup white wine
  • 3 (3.5-oz) pouches boil in bag brown rice

Instructions

  1. Sprinkle shrimp with salt and pepper. Cook in hot oil in a large nonstick skillet over medium-high heat 2 to 3 minutes per side or until shrimp are done. Remove from skillet; keep warm.
  2. Add chorizo and garlic to skillet; cook 3 minutes. Stir in tomatoes, olives, and wine; cook 2 to 3 minutes or until sauce is slightly thickened.
  3. Meanwhile, cook rice according to package directions. Return shrimp to skillet, stirring to coat. Stir in rice.
