Honey-Glazed Chicken and Broccoli

Ingredients

  • 2 (12-oz) pkg broccoli florets
  • 2 lb boneless, skinless chicken thighs, cut into 1 inch pieces
  • 2 Tbsp olive oil
  • ¼ cup honey
  • ¼ cup less sodium soy sauce
  • 1 Tbsp minced garlic
  • 1½ tsp ginger paste
  • 1 red bell pepper, chopped

Instructions

  1. Cook broccoli according to package directions.
  2. Cook chicken, in batches, in hot oil in a large skillet over medium-high heat 3 to 4 minutes or until done.
  3. Meanwhile, combine honey, soy sauce, garlic, and ginger.
  4. Add all chicken, broccoli, and bell pepper to skillet. Pour honey mixture over chicken; cook 2 minutes or until sauce is thickened.

Side Dish Ingredients

  • 1 (8-oz) pkg soba noodles
  • 2 green onions, chopped

Side Dish Instructions

  1. Cook soba noodles according to package directions. Toss with onions.
