Pork Chops with Peach-Mint Salsa
Lemony Mint Orzo and Green Beans

Ingredients
- 3 Tbsp lime juice, divided
- 2 Tbsp white balsamic vinegar
- 2 Tbsp honey
- 2 Tbsp olive oil, divided
- 6 (6-oz) bone in pork chops
- ¾ tsp salt, divided
- ¾ tsp pepper, divided
- 4 peaches, halved and pitted
- 2 Tbsp chopped fresh mint
- 1 shallot, minced
Instructions
- Preheat grill to medium-high heat. Combine 2 Tbsp lime juice, vinegar, honey, and 1 Tbsp oil; brush onto pork.
- Sprinkle pork with ½ tsp each salt and pepper. Brush peaches with 1 Tbsp oil; sprinkle with ¼ tsp each salt and pepper.
- Grill pork, covered, 3 to 4 minutes per side or until done. Grill peaches, cut sides down and covered, 4 minutes or until tender.
- Coarsely chop peaches; toss with mint, shallot, and 1 Tbsp lime juice. Serve salsa over pork.

- 1½ cups orzo
- 1 lemon
- ¼ cup chopped fresh mint
- 3 Tbsp olive oil
- ¾ tsp salt, divided
- ¾ tsp pepper, divided
- 2 (12-oz) pkg green beans
- 1½ tsp garlic powder
Side Dish Instructions
- Cook orzo according to package directions.
- Meanwhile, grate zest and squeeze juice from lemon. Toss together orzo, lemon zest, lemon juice, mint, oil, and ½ tsp each salt and pepper.
- Cook green beans according to package directions. Stir in garlic powder and ¼ tsp each salt and pepper.
