Ingredients

  • ¾ lb skirt steak
  • 2 tsp Southwest seasoning
  • ½ (20-oz) bag frozen peppers and onion blend
  • 2 Roma tomatoes, cut into wedges
  • 1 (10-oz) pkg chopped romaine lettuce
  • ⅓ cup chipotle Ranch dressing

Instructions

  1. Preheat grill or grill pan to medium-high heat. Rub steak with seasoning. Grill steak on lightly greased grill grate 5 minutes per side or to desired doneness; let stand 5 minutes before thinly slicing across the grain.
  2. Cook peppers and onion blend in a nonstick skillet coated with cooking spray over medium-high heat 5 minutes or until crisp-tender. Add tomatoes; cook 3 minutes.
  3. Divide lettuce between 2 plates. Top with steak and peppers mixture. Drizzle with dressing.
