Easy and Crunchy Tex-Mex Salad

Ingredients

  • 1½ lb ground beef
  • 1 (8.8-oz) box hard taco dinner kit
  • ⅓ cup water
  • 1 (15-oz) can black beans, rinsed and drained
  • 1 (3-count) pkg romaine lettuce hearts, chopped
  • 1 (8-oz) block Cheddar cheese, shredded
  • 2 tomatoes, chopped
  • 1 cup Ranch dressing

Instructions

  1. Preheat oven to 350°F. Cook beef in a large skillet over medium heat until browned and crumbly; drain and return to skillet. Stir in taco seasoning mix from kit and water. Bring to a boil, reduce heat, and simmer 5 minutes or until very thick. Stir in beans; cook 2 minutes.
  2. Meanwhile, break taco shells into large pieces, and place on a baking sheet. Bake 10 minutes or until hot.
  3. Divide lettuce among 6 plates; top with beef mixture, taco shell pieces, cheese, and tomatoes.
  4. Stir together taco sauce from kit and Ranch dressing; drizzle over salads.
