Ingredients

  • ½ lb grouper fillets
  • ¾ tsp salt free Greek seasoning
  • 1 Tbsp olive oil, divided
  • ⅔ cup halved grape tomatoes
  • ¼ cup sliced kalamata olives
  • 2 Tbsp drained capers
  • 4 corn tortillas 
  • ½ cup crumbled feta cheese
  • 2 Tbsp chopped fresh parsley

Instructions

  1. Sprinkle fish with seasoning. Cook fish in 2 tsp hot oil in a nonstick skillet over medium-high heat 4 minutes per side or until fish flakes with a fork. Remove fish from skillet; break into large pieces.
  2. Cook tomatoes in 1 tsp hot oil in same skillet over medium-high heat 5 minutes or until tender. Stir in olives and capers.
  3. Divide fish and vegetables among tortillas. Sprinkle with cheese and, if desired, parsley.

  • 3 cups baby spinach
  • 2 Tbsp olive oil vinaigrette 

Side Dish Instructions

  1.  Toss together all ingredients in a medium bowl.
