Mediterranean Fish Tacos

Ingredients
- ½ lb grouper fillets
- ¾ tsp salt free Greek seasoning
- 1 Tbsp olive oil, divided
- ⅔ cup halved grape tomatoes
- ¼ cup sliced kalamata olives
- 2 Tbsp drained capers
- 4 corn tortillas
- ½ cup crumbled feta cheese
- 2 Tbsp chopped fresh parsley
Instructions
- Sprinkle fish with seasoning. Cook fish in 2 tsp hot oil in a nonstick skillet over medium-high heat 4 minutes per side or until fish flakes with a fork. Remove fish from skillet; break into large pieces.
- Cook tomatoes in 1 tsp hot oil in same skillet over medium-high heat 5 minutes or until tender. Stir in olives and capers.
- Divide fish and vegetables among tortillas. Sprinkle with cheese and, if desired, parsley.

- 3 cups baby spinach
- 2 Tbsp olive oil vinaigrette
Side Dish Instructions
- Toss together all ingredients in a medium bowl.
