Barbecue-Ranch Pork Shepherd's Pie
Southern Green Beans and Sweet Cornbread
Ingredients
- 1 (24-oz) pkg refrigerated mashed potatoes
- ⅓ cup sour cream
- ½ (1-oz) envelope Ranch dressing mix
- ½ (16-oz) container pulled barbecue pork in sauce
- ½ cup barbecue sauce
- ½ (15-oz) can whole kernel corn, drained
- ½ (15-oz) can pinto beans, rinsed and drained, optional
- ½ cup shredded Cheddar cheese
Instructions
- Preheat oven to 375°F. Heat potatoes according to package directions. Stir in sour cream and dressing mix.
- Heat barbecue according to package directions and spoon into an ovenproof greased baking dish. Top with sauce, corn, and beans, if using. Spoon mashed potatoes over mixture; sprinkle with cheese. Bake 30 minutes or until hot and bubbly.
Side Dish Ingredients
- 2 cups less sodium chicken broth
- 1 (14.5-oz) can cut green beans, rinsed and drained
- 1 slice bacon, cut in half
- 1 (8.5-oz) box cornbread mix
- ⅓ cup milk
- 1 large egg
Side Dish Instructions
- Combine broth, beans, and bacon in a saucepan; bring to a boil, reduce heat, and simmer 20 minutes. Season with salt and pepper, if desired.
- Meanwhile, prepare cornbread mix according to package directions using milk and egg. Bake cornbread according to package directions.
