Barbecue-Ranch Pork Shepherd's Pie

Ingredients

  • 1 (24-oz) pkg refrigerated mashed potatoes
  • ⅓ cup sour cream
  • ½ (1-oz) envelope Ranch dressing mix
  • ½ (16-oz) container pulled barbecue pork in sauce
  • ½ cup barbecue sauce
  • ½ (15-oz) can whole kernel corn, drained
  • ½ (15-oz) can pinto beans, rinsed and drained, optional
  • ½ cup shredded Cheddar cheese

Instructions

  1. Preheat oven to 375°F. Heat potatoes according to package directions. Stir in sour cream and dressing mix.
  2. Heat barbecue according to package directions and spoon into an ovenproof greased baking dish. Top with sauce, corn, and beans, if using. Spoon mashed potatoes over mixture; sprinkle with cheese. Bake 30 minutes or until hot and bubbly.

  • 2 cups less sodium chicken broth
  • 1 (14.5-oz) can cut green beans, rinsed and drained
  • 1 slice bacon, cut in half
  • 1 (8.5-oz) box cornbread mix
  • ⅓ cup milk
  • 1 large egg

Side Dish Instructions

  1. Combine broth, beans, and bacon in a saucepan; bring to a boil, reduce heat, and simmer 20 minutes. Season with salt and pepper, if desired.
  2. Meanwhile, prepare cornbread mix according to package directions using milk and egg. Bake cornbread according to package directions.
