Easy Potato Hash

Ingredients

  • ½ (32-oz) pkg frozen diced hash browns, thawed
  • 2 tsp olive oil, divided
  • 1 (10-oz) pkg frozen veggie crumbles
  • ½ (12-oz) pkg frozen seasoning blend
  • ¼ tsp salt
  • ¼ tsp pepper
  • 2 tsp butter
  • 4 large eggs

Instructions

  1. Cook hash browns in 1 tsp hot oil in a large nonstick skillet over medium-high heat 6 to 8 minutes or until browned and tender. Remove potatoes from skillet.
  2. Cook crumbles and seasoning blend in 1 tsp hot oil in skillet over medium-high heat 10 minutes or until thoroughly heated. Stir in salt and pepper. Return hash browns to skillet; cook 5 to 7 minutes or until thoroughly heated.
  3. Meanwhile, melt butter in a separate skillet over medium heat. Crack eggs into skillet. Cover and cook 3 minutes or until whites are set and yolks are cooked to desired doneness. Serve eggs over hash; sprinkle with parsley, if desired.
