Ingredients

  • 2 (8.8-oz) pouches microwavable long grain white rice
  • 1½ lb boneless, skinless chicken thighs, cubed
  • 2 Tbsp olive oil
  • 2 (10.8-oz) pkg frozen broccoli, carrots, sugar snap peas, and water chestnuts
  • 1½ cups teriyaki sauce
  • 3 green onions, thinly sliced

Instructions

  1. Cook rice according to package directions.
  2. Meanwhile, cook chicken in hot oil in a large skillet over medium-high heat 6 minutes or until browned.
  3. Add vegetables; cover and cook 8 minutes or until tender, stirring occasionally and adding water, if needed, to prevent sticking.
  4. Stir in sauce; cook 2 minutes or until thoroughly heated. Serve over rice, and sprinkle with onions.
