Grilled Chicken Cordon Bleu

Ingredients
- ½ lb boneless, skinless chicken breasts
- 1 tsp olive oil
- ⅛ tsp salt
- ⅛ tsp pepper
- 1 Tbsp honey mustard
- 2 oz thin sliced less sodium honey ham
- 2 slices Swiss cheese
Instructions
- Preheat grill or grill pan to medium-high heat.
- Pound chicken to an even thickness between plastic wrap using a meat mallet. Brush with oil; sprinkle with salt and pepper.
- Grill chicken, covered, 5 to 6 minutes per side or until done.
- Brush chicken with honey mustard. Top with ham slices and cheese. Cook, covered, 2 minutes or until cheese melts.
Side Dish Ingredients
- 1 (12-oz) pkg refrigerated Parmesan and chive mashed cauliflower
- 1 (12-oz) pkg broccoli florets
- 1 Tbsp melted butter
- ¼ tsp salt
- ¼ tsp pepper
Side Dish Instructions
- Cook cauliflower according to package directions.
- Steam broccoli in a steamer basket over simmering water 10 minutes or until crisp-tender. Drizzle with butter; sprinkle with salt and pepper.
