Creamy Chicken Gnocchi

Ingredients

  • ¼ cup butter
  • 2 lb boneless, skinless chicken breasts, cubed
  • 1 (16-oz) pkg gnocchi
  • 2 cups chicken broth
  • 1 (7.5-oz) container garlic and herb whipped cheese
  • 1 (5-oz) container spinach

Instructions

  1. Melt butter in a large nonstick skillet over medium-high heat. Season chicken with salt and pepper, if desired. Cook chicken, in batches, until browned. Remove from skillet. Add gnocchi, and cook 3 to 4 minutes or until toasted. Remove from skillet.
  2. Add broth; bring to a boil and cook until reduced by half. Add chicken; simmer 5 minutes. Add cheese, stirring until blended. Gradually add spinach until wilted. Stir in gnocchi.

Side Dish Ingredients

  • 1 (14-oz) French bread
  • 1 (3-oz) container garlic, Parmesan, and basil seasoned butter

Side Dish Instructions

  1. Preheat oven to 400°F. Cut bread lengthwise and place, cut sides up, on a rimmed baking sheet. Spread seasoned butter over bread.
  2. Bake 10 minutes or until browned and crisp. Slice.
