Sheet Pan Mediterranean Shrimp

Ingredients
- 1 lemon, halved and divided
- ¾ lb peeled and deveined, large raw shrimp
- ½ red onion, thinly sliced
- ½ pint grape tomatoes
- ½ cup pitted kalamata olives
- 1½ Tbsp olive oil
- ½ tsp Greek seasoning
- ¼ cup crumbled feta cheese
Instructions
- Preheat oven to 400°F. Grate zest and squeeze juice from 1 lemon half. Cut remaining lemon half into wedges.
- Toss together lemon zest, lemon juice, shrimp, onion, tomatoes, olives, oil, and seasoning on a large rimmed baking sheet; spread in a single layer.
- Bake 8 to 10 minutes or until shrimp are done and onion is tender. Stir in cheese, and serve with lemon wedges.
