Ingredients

  • 1 lemon, halved and divided
  • ¾ lb peeled and deveined, large raw shrimp
  • ½ red onion, thinly sliced
  • ½ pint grape tomatoes
  • ½ cup pitted kalamata olives
  • 1½ Tbsp olive oil
  • ½ tsp Greek seasoning
  • ¼ cup crumbled feta cheese

Instructions

  1. Preheat oven to 400°F. Grate zest and squeeze juice from 1 lemon half. Cut remaining lemon half into wedges.
  2. Toss together lemon zest, lemon juice, shrimp, onion, tomatoes, olives, oil, and seasoning on a large rimmed baking sheet; spread in a single layer.
  3. Bake 8 to 10 minutes or until shrimp are done and onion is tender. Stir in cheese, and serve with lemon wedges.

  • ½ Tbsp olive oil
  • 2 small cloves garlic, minced
