Ingredients

  • 2 lb ground chicken
  • 1 onion, diced
  • 1 (16-oz) pkg frozen peas and carrots
  • 1½ cups less sodium chicken broth
  • 2 Tbsp cornstarch
  • 1 Tbsp Worcestershire sauce
  • 1 Tbsp tomato paste
  • ½ tsp pepper
  • 1 (32-oz) container refrigerated mashed potatoes

Instructions

  1. Preheat broiler. Cook chicken and onion in a large skillet over medium heat 8 minutes or until chicken is browned and onion is tender. Add peas and carrots.
  2. Whisk together broth, cornstarch, Worcestershire sauce, tomato paste, and pepper; add to skillet. Cook 3 to 5 minutes or until sauce is thickened. Transfer mixture to a 13- x 9-inch baking dish.

  • 1 (10-oz) pkg spinach
  • ⅓ cup olive oil vinaigrette

Side Dish Instructions

  1. Toss together spinach and vinaigrette in a large bowl.
