Ingredients
- 2 lb ground chicken
- 1 onion, diced
- 1 (16-oz) pkg frozen peas and carrots
- 1½ cups less sodium chicken broth
- 2 Tbsp cornstarch
- 1 Tbsp Worcestershire sauce
- 1 Tbsp tomato paste
- ½ tsp pepper
- 1 (32-oz) container refrigerated mashed potatoes
Instructions
- Preheat broiler. Cook chicken and onion in a large skillet over medium heat 8 minutes or until chicken is browned and onion is tender. Add peas and carrots.
- Whisk together broth, cornstarch, Worcestershire sauce, tomato paste, and pepper; add to skillet. Cook 3 to 5 minutes or until sauce is thickened. Transfer mixture to a 13- x 9-inch baking dish.

- 1 (10-oz) pkg spinach
- ⅓ cup olive oil vinaigrette
Side Dish Instructions
- Toss together spinach and vinaigrette in a large bowl.
