Individual Pumpkin Trifles

Ingredients

  • 1 (15-oz) can pumpkin puree
  • 1 cup whole milk plain Greek yogurt
  • 1 (8-oz) container mascarpone cheese, softened and divided
  • ½ cup brown sugar
  • ½ tsp ground cinnamon 
  • ½ tsp pumpkin pie spice
  • ½ tsp salt, divided
  • 1½ cups heavy cream, chilled
  • 3 Tbsp maple syrup
  • 2 tsp vanilla extract or vanilla bean paste
  • ½ (8.8-oz) pkg Biscoff cookies, lightly crushed
  • 6 Tbsp chopped pecans, toasted
  • 6 Tbsp roasted, salted pepitas
  • 6 Tbsp salted caramel topping

Instructions

  1. Beat pumpkin, yogurt, ½ container mascarpone, sugar, cinnamon, pie spice and ¼ tsp salt using an electric mixer until smooth; set aside.
  2. Beat cream, ½ container mascarpone, syrup, vanilla, and ¼ tsp salt using mixer until soft peaks form.
  3. Layer pumpkin mixture, mascarpone cream, cookies, and nuts, and pepitas in 6 glasses. Drizzle with caramel topping.
