Individual Pumpkin Trifles

Ingredients
- 1 (15-oz) can pumpkin puree
- 1 cup whole milk plain Greek yogurt
- 1 (8-oz) container mascarpone cheese, softened and divided
- ½ cup brown sugar
- ½ tsp ground cinnamon
- ½ tsp pumpkin pie spice
- ½ tsp salt, divided
- 1½ cups heavy cream, chilled
- 3 Tbsp maple syrup
- 2 tsp vanilla extract or vanilla bean paste
- ½ (8.8-oz) pkg Biscoff cookies, lightly crushed
- 6 Tbsp chopped pecans, toasted
- 6 Tbsp roasted, salted pepitas
- 6 Tbsp salted caramel topping
Instructions
- Beat pumpkin, yogurt, ½ container mascarpone, sugar, cinnamon, pie spice and ¼ tsp salt using an electric mixer until smooth; set aside.
- Beat cream, ½ container mascarpone, syrup, vanilla, and ¼ tsp salt using mixer until soft peaks form.
- Layer pumpkin mixture, mascarpone cream, cookies, and nuts, and pepitas in 6 glasses. Drizzle with caramel topping.
