Loaded Pumpkin Bars

Ingredients
- 1 cup butter, softened
- 1 cup packed brown sugar
- ½ cup sugar
- 2 large eggs, divided
- 1 Tbsp vanilla extract
- 1 (15-oz) can pumpkin puree
- 2½ cups all purpose flour
- 1½ tsp pumpkin pie spice
- ¾ tsp baking soda
- ½ tsp salt
- 2 (4-oz) dark chocolate bars, coarsely chopped
- ¾ cup toasted chopped pecans
- ¾ cup toffee bits
- ½ (15-oz) jar salted caramel topping
Instructions
- Preheat oven to 350°F. Beat butter and both sugars using an electric mixer until light and fluffy. Add 1 egg and vanilla; beat until smooth. Add pumpkin; beat until blended.
- Whisk together flour, pie spice, baking soda, and salt in a large bowl. Gradually add flour mixture to wet ingredients, mixing until smooth.
- Fold in chocolate, nuts, and toffee bit. Spoon batter into a lightly greased 9- x 13-inch baking dish.
- Whisk together 1 egg and caramel topping in a bowl; spoon over batter and make swirls using a knife or toothpick.
- Bake 35 to 40 minutes or until done. Let cool before cutting into bars.
