Loaded Pumpkin Bars

Ingredients

  • 1 cup butter, softened
  • 1 cup packed brown sugar
  • ½ cup sugar
  • 2 large eggs, divided
  • 1 Tbsp vanilla extract
  • 1 (15-oz) can pumpkin puree
  • 2½ cups all purpose flour
  • 1½ tsp pumpkin pie spice
  • ¾ tsp baking soda
  • ½ tsp salt
  • 2 (4-oz) dark chocolate bars, coarsely chopped
  • ¾ cup toasted chopped pecans
  • ¾ cup toffee bits
  • ½ (15-oz) jar salted caramel topping

Instructions

  1. Preheat oven to 350°F. Beat butter and both sugars using an electric mixer until light and fluffy. Add 1 egg and vanilla; beat until smooth. Add pumpkin; beat until blended.
  2. Whisk together flour, pie spice, baking soda, and salt in a large bowl. Gradually add flour mixture to wet ingredients, mixing until smooth.
  3. Fold in chocolate, nuts, and toffee bit. Spoon batter into a lightly greased 9- x 13-inch baking dish.
  4. Whisk together 1 egg and caramel topping in a bowl; spoon over batter and make swirls using a knife or toothpick.
  5. Bake 35 to 40 minutes or until done. Let cool before cutting into bars.
