Chipotle Turkey Bowls
Creamy Cilantro-Lime "Rice"Ingredients
- ¾ lb ground turkey
- ½ red bell pepper, sliced
- ½ onion, sliced
- 1 Tbsp olive oil
- 1 chipotle pepper in adobo sauce, chopped
- ½ tsp chili powder
- ½ tsp ground cumin
- ¼ tsp salt
- ⅛ tsp pepper
- 1 avocado, sliced
- 2 Tbsp chopped fresh cilantro
Instructions
- Cook turkey, bell pepper, and onion in hot oil in a large skillet over medium-high heat 8 to 10 minutes or turkey is done and vegetables are tender.
- Stir in chipotle pepper, chili powder, cumin, salt, and pepper. Cook 2 minutes or until thoroughly heated. Serve turkey mixture over side recipe. Top with avocado and cilantro.
Side Dish Ingredients
- 1 (12-oz) pkg frozen cauliflower rice
- 6 Tbsp sour cream
- 2 Tbsp chopped fresh cilantro
- 1 Tbsp lime juice
Side Dish Instructions
- Cook cauliflower according to package directions.Transfer to a bowl.
- Stir sour cream, cilantro, and lime juice into hot cauliflower rice.
