Chipotle Turkey Bowls

Ingredients

  • ¾ lb ground turkey
  • ½ red bell pepper, sliced
  • ½ onion, sliced
  • 1 Tbsp olive oil
  • 1 chipotle pepper in adobo sauce, chopped
  • ½ tsp chili powder
  • ½ tsp ground cumin
  • ¼ tsp salt
  • ⅛ tsp pepper
  • 1 avocado, sliced
  • 2 Tbsp chopped fresh cilantro

Instructions

  1. Cook turkey, bell pepper, and onion in hot oil in a large skillet over medium-high heat 8 to 10 minutes or turkey is done and vegetables are tender.
  2. Stir in chipotle pepper, chili powder, cumin, salt, and pepper. Cook 2 minutes or until thoroughly heated. Serve turkey mixture over side recipe. Top with avocado and cilantro.

Side Dish Ingredients

  • 1 (12-oz) pkg frozen cauliflower rice
  • 6 Tbsp sour cream
  • 2 Tbsp chopped fresh cilantro
  • 1 Tbsp lime juice

Side Dish Instructions

  1. Cook cauliflower according to package directions.Transfer to a bowl.
  2. Stir sour cream, cilantro, and lime juice into hot cauliflower rice.
