Sour Cream-Dill Salmon

Ingredients

  • 1 lb salmon fillets
  • ⅛ tsp salt
  • ¼ cup light sour cream
  • 2 Tbsp reduced fat olive oil mayonnaise
  • ½ tsp dried dill 
  • 2 Tbsp freshly grated Parmesan cheese

Instructions

  1. Preheat oven to 425°F. Place fish in a greased small baking dish; sprinkle with salt.
  2. Combine sour cream, mayonnaise, and dill. Spread mixture on fish.
  3. Bake 10 to 12 minutes or until fish flakes with a fork. Remove from oven; sprinkle with cheese.
  4. Increase oven temperature to broil. Broil 1 minute.

  • 1 (16-oz) pkg rainbow carrots
  • 1½ Tbsp minced garlic
  • 1 Tbsp olive oil
  • ½ Tbsp lemon juice
  • ⅛ tsp salt
  • ⅛ tsp pepper
  • 2 Tbsp chopped fresh parsley

Side Dish Instructions

  1. Preheat oven to 425°F. Cut carrots into 3-inch sticks. Toss carrots, garlic, oil, lemon juice, salt, and pepper on a greased rimmed baking sheet; spread in a single layer.
  2. Bake 20 to 25 minutes or until tender; toss with parsley.
