Gnocchi with Sausage, White Beans and Kale

Ingredients
- ½ cup butter
- 2 (16-oz) pkg gnocchi
- 1 (16-oz) pkg sweet Italian sausage
- 1 (15-oz) can great Northern beans, rinsed and drained
- ½ cup white wine
- 1 (5-oz) container baby kale
- ½ cup grated Parmesan cheese
Instructions
- Melt 4 Tbsp butter in a large skillet over medium-high heat. Add 1 package gnocchi, spreading in a single layer in skillet. Cook 5 minutes until crisp and tender, turning to brown on all sides. Remove gnocchi from skillet; keep warm. Repeat with remaining butter and gnocchi.
- Cook sausage in same skillet over medium-high heat until browned and crumbly.
- Return all gnocchi to skillet. Add beans and wine; cover, and simmer 3 minutes. Uncover, and gradually stir in kale. Season with salt and pepper, if desired. Sprinkle with cheese.
