Chicken Pot Pie Mashed Potatoes
Biscuits and Apple Butter
Ingredients
- 2 Tbsp butter
- 3 cups chopped rotisserie chicken
- 1 (15-oz) pkg frozen classic mixed vegetables
- ½ tsp salt
- ½ tsp pepper
- 1 (10.5-oz) can cream of chicken soup
- 2½ cups chicken broth
- 1 (32-oz) container refrigerated mashed potatoes
Instructions
- Melt butter in a large skillet or saucepan over medium-high heat. Add chicken, vegetables, salt, and pepper; cook 2 to 3 minutes.
- Add soup and broth; bring to a boil. Reduce heat, and simmer 10 minutes or until thickened.
- Meanwhile, heat mashed potatoes according to package directions.
- Serve chicken pie filling over mashed potatoes.

- ½ (12-count) pkg frozen buttermilk biscuits
- ½ (9-oz) jar country apple butter
Side Dish Instructions
- Bake biscuits according to package directions; serve with apple butter.
