Chicken Pot Pie Mashed Potatoes

Ingredients

  • 2 Tbsp butter
  • 3 cups chopped rotisserie chicken
  • 1 (15-oz) pkg frozen classic mixed vegetables
  • ½ tsp salt
  • ½ tsp pepper
  • 1 (10.5-oz) can cream of chicken soup
  • 2½ cups chicken broth
  • 1 (32-oz) container refrigerated mashed potatoes

Instructions

  1. Melt butter in a large skillet or saucepan over medium-high heat. Add chicken, vegetables, salt, and pepper; cook 2 to 3 minutes.
  2. Add soup and broth; bring to a boil. Reduce heat, and simmer 10 minutes or until thickened.
  3. Meanwhile, heat mashed potatoes according to package directions.
  4. Serve chicken pie filling over mashed potatoes.

  • ½ (12-count) pkg frozen buttermilk biscuits
  • ½ (9-oz) jar country apple butter

Side Dish Instructions

  1. Bake biscuits according to package directions; serve with apple butter.
