Ingredients

  • 6 Tbsp butter, divided
  • 2 lb boneless, skinless chicken breasts, cubed
  • 1 (8-oz) pkg sliced mushrooms
  • 1 (10.5-oz) can cream of chicken soup
  • 1 (8-oz) carton sour cream
  • 1 cup chicken broth
  • 1 tsp dried crushed rosemary
  • 2 (8.8-oz) pouches microwavable long grain white rice
  • 2 cups coarsely crushed round buttery crackers

Instructions

  1. Melt 3 Tbsp butter in a large skillet over medium heat. Add chicken and mushrooms; cook, stirring frequently, until chicken is done and mushrooms are tender.
  2. Stir in soup, sour cream, broth, and rosemary; bring to a boil, reduce heat, and simmer 10 minutes.
  3. Meanwhile, heat rice according to package directions; add to chicken mixture, stirring to blend.
  4. Melt remaining 3 Tbsp butter in a skillet; add crackers, and cook, stirring frequently, until toasted. Sprinkle over chicken mixture.

  1. Steam broccoli according to package directions. Toss with butter.
