Ingredients
- 6 Tbsp butter, divided
- 2 lb boneless, skinless chicken breasts, cubed
- 1 (8-oz) pkg sliced mushrooms
- 1 (10.5-oz) can cream of chicken soup
- 1 (8-oz) carton sour cream
- 1 cup chicken broth
- 1 tsp dried crushed rosemary
- 2 (8.8-oz) pouches microwavable long grain white rice
- 2 cups coarsely crushed round buttery crackers
Instructions
- Melt 3 Tbsp butter in a large skillet over medium heat. Add chicken and mushrooms; cook, stirring frequently, until chicken is done and mushrooms are tender.
- Stir in soup, sour cream, broth, and rosemary; bring to a boil, reduce heat, and simmer 10 minutes.
- Meanwhile, heat rice according to package directions; add to chicken mixture, stirring to blend.
- Melt remaining 3 Tbsp butter in a skillet; add crackers, and cook, stirring frequently, until toasted. Sprinkle over chicken mixture.
