Shrimp Cacio e Pepe

Ingredients
- 4 oz whole grain spaghetti
- ½ lb peeled and deveined, large raw shrimp
- ⅛ tsp garlic salt
- 1 tsp olive oil
- 1 Tbsp butter
- ½ tsp pepper
- ½ cup freshly grated Parmesan cheese
- 1 cup baby arugula
Instructions
- Cook pasta according to package directions until just al dente. Drain, reserving ½ cup pasta water.
- Meanwhile, sprinkle shrimp with garlic salt. Cook in hot oil in a skillet over medium-high heat 3 to 5 minutes or until shrimp turn pink. Remove shrimp from skillet; keep warm.
- Melt butter in skillet over medium heat. Stir in pepper, and cook 1 minute. Slowly whisk in ¼ cup pasta water until well blended. Remove from heat, and let stand 3 minutes.
- Stir in ½ cup cheese, pasta, and remaining pasta water. Season with salt and more pepper, if desired.
- Top with shrimp, arugula, and, if desired, more cheese.
