Shrimp Cacio e Pepe

Ingredients

  • 4 oz whole grain spaghetti
  • ½ lb peeled and deveined, large raw shrimp
  • ⅛ tsp garlic salt
  • 1 tsp olive oil
  • 1 Tbsp butter
  • ½ tsp pepper
  • ½ cup freshly grated Parmesan cheese
  • 1 cup baby arugula

Instructions

  1. Cook pasta according to package directions until just al dente. Drain, reserving ½ cup pasta water.
  2. Meanwhile, sprinkle shrimp with garlic salt. Cook in hot oil in a skillet over medium-high heat 3 to 5 minutes or until shrimp turn pink. Remove shrimp from skillet; keep warm.
  3. Melt butter in skillet over medium heat. Stir in pepper, and cook 1 minute. Slowly whisk in ¼ cup pasta water until well blended. Remove from heat, and let stand 3 minutes.
  4. Stir in ½ cup cheese, pasta, and remaining pasta water. Season with salt and more pepper, if desired.
  5. Top with shrimp, arugula, and, if desired, more cheese.
