Salisbury Steak with Mushroom Gravy

Smashed Garlic Potatoes and Roasted Broccoli

Ingredients

  • ¾ lb lean ground beef
  • ¼ cup panko breadcrumbs
  • 1½ Tbsp Worcestershire sauce, divided
  • ½ Tbsp Dijon mustard
  • ½ Tbsp tomato paste
  • ¼ tsp pepper, divided
  • ⅛ tsp salt
  • 1 Tbsp canola oil
  • ½ onion, sliced
  • 1 (8-oz) pkg sliced mushrooms
  • 1¼ cups less sodium beef broth
  • ½ tsp cornstarch

Instructions

  1. Combine beef, panko, 1 Tbsp Worcestershire sauce, mustard, tomato paste, and ⅛ tsp each pepper and salt. Shape mixture into 3 patties.
  2. Cook patties in hot oil in a nonstick skillet over medium heat 2 minutes per side or until browned. Remove from skillet; keep warm.
  3. Add onion and mushrooms to skillet; sauté 6 to 7 minutes or until browned and tender.
  4. Whisk together broth, ½ Tbsp Worcestershire, and cornstarch; add to onion mixture along with ⅛ tsp pepper.
  5. Return patties to skillet; cover and cook 5 minutes or until done.

  • ¾ lb red potatoes, cut into chunks
  • 1 clove garlic, sliced
  • ¼ cup less sodium chicken broth
  • 2 Tbsp olive oil, divided
  • ¼ tsp pepper, divided
  • ⅛ tsp salt, divided
  • ¾ lb broccoli crowns, cut into florets

Side Dish Instructions

  1. Preheat oven to 400°F. Bring potatoes, garlic, and water to cover to a boil in a medium saucepan; reduce heat, and simmer 15 minutes or until tender. Drain; return potatoes and garlic to saucepan.
  2. Add broth, 1 Tbsp oil, ⅛ tsp pepper, and a pinch of salt to potatoes; mash with a potato masher to desired consistency.
  3. Meanwhile, toss broccoli with 1 Tbsp oil, ⅛ tsp pepper, and a pinch of salt on a greased rimmed baking sheet; spread in a single layer.
  4. Roast 15 to 20 minutes or until browned and tender.
