Moroccan Fried Eggs over Grains

Ingredients

  • 1 (8.5-oz) pouch microwavable seven whole grains mix
  • 1 small shallot, thinly sliced
  • 1 Tbsp olive oil, divided
  • ⅔ cup rinsed and drained canned lentils
  • 1 tsp Za’atar seasoning
  • ⅛ tsp salt
  • ⅛ tsp pepper
  • ⅔ cup grape tomatoes, halved
  • ½ small English cucumber, cut into half-moons
  • 2 large eggs

Instructions

  1. Microwave grains according to package directions. Cook shallot in ½ Tbsp hot oil in a large nonstick skillet over medium heat 2 to 3 minutes or until tender.
  2. Stir in grains, lentils, seasoning, salt, and pepper. Cook 5 to 7 minutes or until thoroughly heated. Remove from heat. Stir in tomatoes and cucumber.
  3. Heat ½ Tbsp oil in a separate skillet over medium heat; crack eggs into skillet. Cook 3 to 5 minutes or until whites are set and yolks are cooked to desired doneness. Serve eggs over grains.
