Falafel with Tzatziki Sauce
Tomato Couscous
Ingredients
- 1 lemon
- 2 (15-oz) cans chickpeas, rinsed and drained
- ¼ cup chopped fresh parsley
- 1 tsp ground cumin
- ½ tsp salt
- ½ tsp pepper
- 2 cloves garlic, halved
- 1 large egg
- ½ cup panko breadcrumbs
- 1 (8-oz) container tzatziki dip
Instructions
- Grate zest and squeeze juice from lemon. Add lemon zest, lemon juice, chickpeas, parsley, cumin, salt, pepper, garlic, and egg to a food processor. Cover and process until smooth, scraping down sides as needed.
- Stir breadcrumbs into chickpea mixture; shape into 12 (½-inch-thick) patties.
- Cook patties, in batches, in a large nonstick skillet coated with cooking spray over medium-high heat 3 minutes per side or until browned. Serve with tzatziki sauce.

- 1½ cups Israeli couscous
- 1 lemon
- 1 pint grape tomatoes, halved
- ½ cup chopped fresh parsley
- 3 Tbsp olive oil
- ½ tsp salt
- ½ tsp pepper
Side Dish Instructions
- Cook couscous according to package directions.
- Grate zest and squeeze juice from lemon into a large bowl. Add couscous, tomatoes, parsley, oil, salt, and pepper; toss.
