Falafel with Tzatziki Sauce

Ingredients

  • 1 lemon
  • 2 (15-oz) cans chickpeas, rinsed and drained
  • ¼ cup chopped fresh parsley
  • 1 tsp ground cumin
  • ½ tsp salt
  • ½ tsp pepper
  • 2 cloves garlic, halved
  • 1 large egg
  • ½ cup panko breadcrumbs
  • 1 (8-oz) container tzatziki dip

Instructions

  1. Grate zest and squeeze juice from lemon. Add lemon zest, lemon juice, chickpeas, parsley, cumin, salt, pepper, garlic, and egg to a food processor. Cover and process until smooth, scraping down sides as needed.
  2. Stir breadcrumbs into chickpea mixture; shape into 12 (½-inch-thick) patties.
  3. Cook patties, in batches, in a large nonstick skillet coated with cooking spray over medium-high heat 3 minutes per side or until browned. Serve with tzatziki sauce.

  • 1½ cups Israeli couscous
  • 1 lemon
  • 1 pint grape tomatoes, halved
  • ½ cup chopped fresh parsley
  • 3 Tbsp olive oil
  • ½ tsp salt
  • ½ tsp pepper

Side Dish Instructions

  1. Cook couscous according to package directions.
  2. Grate zest and squeeze juice from lemon into a large bowl. Add couscous, tomatoes, parsley, oil, salt, and pepper; toss.
