Ingredients
- 6 slices bacon, chopped
- 12 oz penne pasta
- 3 cups shredded rotisserie chicken
- 1 (1-oz) envelope Ranch dressing mix
- 1 (8-oz) block cream cheese, softened
- 1 cup shredded Cheddar cheese
- 2 Tbsp chopped fresh parsley, optional
Instructions
- Cook bacon in a large skillet over medium heat until crisp; drain on paper towels.
- Meanwhile, cook pasta according to package directions; drain, reserving 1 cup pasta water. Return pasta to pot.
- Add chicken, Ranch mix, bacon, and cream cheese to hot cooked pasta, stirring until cheese melts. Stir in shredded cheese until melted, adding pasta water to create a sauce. Sprinkle with parsley, if desired.
Side Dish Ingredients
- 1 (16-oz) pkg frozen green peas
- ½ cup chicken broth
- ½ tsp pepper
- 3 Tbsp chopped fresh basil
Side Dish Instructions
- Combine peas, broth, and pepper in a saucepan. Cook over medium heat 5 to 6 minutes or until peas are thoroughly heated. Stir in basil.
