Ingredients

  • 6 slices bacon, chopped
  • 12 oz penne pasta
  • 3 cups shredded rotisserie chicken
  • 1 (1-oz) envelope Ranch dressing mix
  • 1 (8-oz) block cream cheese, softened
  • 1 cup shredded Cheddar cheese
  • 2 Tbsp chopped fresh parsley, optional

Instructions

  1. Cook bacon in a large skillet over medium heat until crisp; drain on paper towels.
  2. Meanwhile, cook pasta according to package directions; drain, reserving 1 cup pasta water. Return pasta to pot.
  3. Add chicken, Ranch mix, bacon, and cream cheese to hot cooked pasta, stirring until cheese melts. Stir in shredded cheese until melted, adding pasta water to create a sauce. Sprinkle with parsley, if desired.

Side Dish Ingredients

  • 1 (16-oz) pkg frozen green peas
  • ½ cup chicken broth
  • ½ tsp pepper
  • 3 Tbsp chopped fresh basil

Side Dish Instructions

  1. Combine peas, broth, and pepper in a saucepan. Cook over medium heat 5 to 6 minutes or until peas are thoroughly heated. Stir in basil.
