Greek Spinach Grilled Cheese Sandwiches
Balsamic-Oregano Tomatoes
Ingredients
- 2 (10-oz) pkg frozen chopped spinach, thawed
- 1½ cups shredded part skim mozzarella cheese
- 1 cup crumbled feta cheese
- ½ cup olive oil mayonnaise, divided
- 1½ tsp dried oregano
- ¼ tsp crushed red pepper
- 12 slices multigrain bakery bread
- 2 Tbsp honey, heated
Instructions
- Squeeze spinach dry using paper towels. Combine spinach, both cheeses, 3 Tbsp mayonnaise, oregano, and red pepper in a bowl; stir until blended.
- Top 6 bread slices with cheese mixture; cover with remaining bread slices. Brush outsides of sandwiches with 5 Tbsp mayonnaise.
- Cook sandwiches, in batches, in a large nonstick skillet over medium heat 3 to 4 minutes per side or until golden and cheese is melted. Drizzle honey on sandwiches.
Side Dish Ingredients
- 3 large tomatoes, sliced
- 3 Tbsp balsamic vinegar
- 1½ Tbsp olive oil
- ½ tsp dried oregano
- ¾ tsp freshly ground pepper
Side Dish Instructions
- Arrange tomato slices on a plate. Drizzle with vinegar and oil; sprinkle with oregano and pepper.
