Buffalo Beef Meatballs

Ingredients

  • 2½ lb ground beef
  • 1 cup panko breadcrumbs
  • ⅓ cup Ranch dressing
  • ½ cup diced celery
  • 3 green onions, diced
  • 2 cloves garlic, minced
  • 2 egg yolks
  • 2 cups chicken broth
  • 1 cup wing sauce
  • ¼ cup ketchup

Instructions

  1. Preheat oven to 400°F. Stir together beef, breadcrumbs, dressing, celery, green onions, garlic, and egg yolks in a large bowl until blended. Form mixture into 1½-inch meatballs and place on a lightly greased wire rack over a rimmed baking sheet. Bake 20 minutes.
  2. Meanwhile, bring broth, wing sauce, and ketchup to a boil in a large skillet over medium-high heat. Reduce heat, and simmer 15 minutes. Add meatballs, and simmer 10 minutes longer or until sauce is thickened, stirring occasionally.
