Sheet Pan Roasted Fish with Broccoli and Tomatoes

Ingredients

  • 2 (6-oz) cod fillets
  • 1½ Tbsp olive oil, divided
  • 1 tsp Italian seasoning
  • ¼ tsp salt, divided
  • ¼ tsp pepper
  • ⅔ cup grape tomatoes, halved
  • ½ (12-oz) pkg broccoli florets
  • 1 clove garlic, minced
  • 1 tsp lemon zest
  • 1 Tbsp lemon juice
  • 1 Tbsp chopped fresh basil
  • 1 tsp honey

Instructions

  1. Preheat oven to 425°F. Place fish on a rimmed baking sheet. Drizzle with ½ Tbsp oil; sprinkle with Italian seasoning, ⅛ tsp salt, and pepper.
  2. Toss together tomatoes, broccoli, 1 Tbsp oil, garlic, and ⅛ tsp salt in a large bowl. Arrange tomato mixture around fish.
  3. Bake 15 to 20 minutes or until fish flakes with a fork.
  4. Meanwhile, stir together lemon zest, lemon juice, basil, and honey; drizzle over fish and vegetables.

  • 1 Tbsp olive oil
  • ⅛ tsp pepper
  • 4 cups spring mix

Side Dish Instructions

  1. Whisk together first 3 ingredients a large bowl. Add greens; toss.
