Sheet Pan Roasted Fish with Broccoli and Tomatoes
Spring Mix SaladIngredients
- 2 (6-oz) cod fillets
- 1½ Tbsp olive oil, divided
- 1 tsp Italian seasoning
- ¼ tsp salt, divided
- ¼ tsp pepper
- ⅔ cup grape tomatoes, halved
- ½ (12-oz) pkg broccoli florets
- 1 clove garlic, minced
- 1 tsp lemon zest
- 1 Tbsp lemon juice
- 1 Tbsp chopped fresh basil
- 1 tsp honey
Instructions
- Preheat oven to 425°F. Place fish on a rimmed baking sheet. Drizzle with ½ Tbsp oil; sprinkle with Italian seasoning, ⅛ tsp salt, and pepper.
- Toss together tomatoes, broccoli, 1 Tbsp oil, garlic, and ⅛ tsp salt in a large bowl. Arrange tomato mixture around fish.
- Bake 15 to 20 minutes or until fish flakes with a fork.
- Meanwhile, stir together lemon zest, lemon juice, basil, and honey; drizzle over fish and vegetables.

- 1 Tbsp olive oil
- ⅛ tsp pepper
- 4 cups spring mix

- Whisk together first 3 ingredients a large bowl. Add greens; toss.
