Mexican Black Bean Pizzas

Ingredients
- 1 (15-oz) pkg vegan pizza crusts
- 1 (15.4-oz) can vegan refried black beans
- 1 cup vegan shredded mozzarella cheese
- 2 Roma tomatoes, thinly sliced
- ½ cup sliced red onion
- 1 jalapeno pepper, sliced
- 2 avocados, sliced
- ¼ cup chopped fresh cilantro
Instructions
- Preheat oven to 400°F. Bake crusts directly on oven rack 2 minutes.
- Spread beans over crusts; top with cheese, tomatoes, onion, and jalapeño. Bake pizzas 8 to 10 minutes longer or until crisp.
- Top with avocado and cilantro. Cut into wedges.

- 1 (12-oz) pkg frozen corn kernels
- 1 bell pepper, diced
- 2 cloves garlic, minced
- 1 Tbsp olive oil
- 1 Tbsp lime juice
- ¼ tsp salt
- ¼ tsp pepper
Side Dish Instructions
- Sauté corn, bell pepper, and garlic in hot oil in a large skillet over medium-high heat 5 minutes or until tender. Stir in lime juice, salt, and pepper.
