Mexican Black Bean Pizzas

Ingredients

  • 1 (15-oz) pkg vegan pizza crusts
  • 1 (15.4-oz) can vegan refried black beans
  • 1 cup vegan shredded mozzarella cheese
  • 2 Roma tomatoes, thinly sliced
  • ½ cup sliced red onion
  • 1 jalapeno pepper, sliced
  • 2 avocados, sliced
  • ¼ cup chopped fresh cilantro

Instructions

  1. Preheat oven to 400°F. Bake crusts directly on oven rack 2 minutes.
  2. Spread beans over crusts; top with cheese, tomatoes, onion, and jalapeño. Bake pizzas 8 to 10 minutes longer or until crisp.
  3. Top with avocado and cilantro. Cut into wedges.

  • 1 (12-oz) pkg frozen corn kernels
  • 1 bell pepper, diced
  • 2 cloves garlic, minced
  • 1 Tbsp olive oil
  • 1 Tbsp lime juice
  • ¼ tsp salt
  • ¼ tsp pepper

Side Dish Instructions

  1. Sauté corn, bell pepper, and garlic in hot oil in a large skillet over medium-high heat 5 minutes or until tender. Stir in lime juice, salt, and pepper.
