Smoky Chicken and Sausage Rice Skillet

Ingredients
- ½ lb boneless, skinless chicken breasts, cubed
- ¾ tsp smoked paprika
- ¼ tsp salt
- ½ (13-oz) pkg smoked turkey sausage links, sliced
- 1 Tbsp olive oil
- 1 (8-oz) pkg diced tricolor bell pepper mix
- ½ cup less sodium chicken broth
- 1½ tsp chopped fresh thyme
- 1 (3.5-oz) pouch boil in bag brown rice
Instructions
- Sprinkle chicken with paprika and salt. Cook chicken and sausage in hot oil in a large nonstick skillet over medium-high heat 6 to 8 minutes or until browned, stirring occasionally.
- Add bell peppers, and cook 2 minutes or until crisp-tender. Stir in broth and thyme. Reduce heat to medium; cover and cook 5 minutes or until vegetables are tender and chicken is done.
- Meanwhile, cook rice according to package directions. Stir rice into chicken mixture until blended.

- 1½ Tbsp balsamic vinegar
- 1 tsp honey
- ⅛ tsp salt
- ⅛ tsp pepper
- 1 (5-oz) pkg sweet baby lettuces
- ¼ cup chopped red onion
Side Dish Instructions
- Whisk together oil, vinegar, honey, salt, and pepper in a medium bowl. Add lettuce and onion; toss.
