Saucy Lemon Chicken

Orzo with Spinach

Ingredients

  • 1 lb boneless, skinless chicken breasts 
  • ¼ tsp salt
  • ¼ tsp pepper
  • 1 Tbsp vegetable oil
  • 1 Tbsp lemon juice
  • ⅓ cup white wine
  • 1 cup less sodium chicken broth
  • ½ tsp dried thyme
  • ½ Tbsp cornstarch
  • 1 Tbsp cold water

Instructions

  1. Cut chicken in half lengthwise, and pound to an even thickness between plastic wrap using a meat mallet. Sprinkle with salt and pepper.
  2. Cook chicken in hot oil in a skillet over medium-high heat 3 minutes per side or until browned. Add lemon juice, wine, broth, and thyme; cover and cook 8 minutes or until chicken is done. Remove chicken from skillet, and keep warm.
  3. Stir together cornstarch and cold water; add to skillet, and cook, stirring constantly, until sauce is thickened. Spoon sauce over chicken.

  • ¾ cup orzo
  • ½ (6-oz) pkg baby spinach
  • 1 Tbsp olive oil
  • 1 tsp dried oregano 
  • ¼ tsp salt
  • ⅛ tsp pepper

Side Dish Instructions

  1. Cook orzo according to package directions; drain.
  2. Add spinach and remaining ingredients to orzo; toss.
