Garlicky Beef and Peppers Soup

Ingredients

  • 1 lb lean ground beef 
  • ½ onion, chopped
  • 1 small red bell pepper, chopped
  • 1 small green bell pepper, chopped
  • 1 cup chopped celery
  • 3 cloves garlic, minced
  • 2 cups unsalted beef broth
  • 1 (14.5-oz) can no salt added diced tomatoes
  • 1 (8-oz) can tomato sauce
  • ½ cup water
  • ¼ tsp pepper

Instructions

  1. Cook beef in a large skillet over medium heat 8 minutes or until browned and crumbly; drain and transfer to a 3- to 4-quart slow cooker.
  2. Add onion, bell peppers, celery, and garlic to cooker. Pour broth, tomatoes, tomato sauce, and water over vegetables. Stir in pepper.
  3. Cover and cook on LOW 8 hours.
