Garlicky Beef and Peppers Soup
Ingredients
- 1 lb lean ground beef
- ½ onion, chopped
- 1 small red bell pepper, chopped
- 1 small green bell pepper, chopped
- 1 cup chopped celery
- 3 cloves garlic, minced
- 2 cups unsalted beef broth
- 1 (14.5-oz) can no salt added diced tomatoes
- 1 (8-oz) can tomato sauce
- ½ cup water
- ¼ tsp pepper
Instructions
- Cook beef in a large skillet over medium heat 8 minutes or until browned and crumbly; drain and transfer to a 3- to 4-quart slow cooker.
- Add onion, bell peppers, celery, and garlic to cooker. Pour broth, tomatoes, tomato sauce, and water over vegetables. Stir in pepper.
- Cover and cook on LOW 8 hours.
