Ingredients

  • 2 tsp lime zest
  • 3 Tbsp lime juice
  • ¼ cup maple syrup
  • ¼ cup soy sauce
  • 6 (8-oz) skin on salmon fillets
  • 2 Tbsp olive oil

Instructions

  1. Combine lime zest, juice, syrup, and soy sauce in a large zip-top plastic bag. Add salmon, seal bag, and let stand 15 minutes.
  2. Remove salmon from marinade; discard marinade.
  3. Cook salmon, skin-side-up, in hot oil in a large skillet over medium-high heat 4 minutes; flip, and cook 3 to 4 minutes or to desired doneness.

Side Dish Ingredients

  • 1 (8.8-oz) pkg pearl couscous
  • 1 (10-oz) pkg spinach
  • 1 pint grape tomatoes, halved
  • ¾ cup thinly sliced red onion
  • ¼ cup balsamic vinaigrette

Side Dish Instructions

  1. Cook couscous according to package directions. Spoon into a large bowl. Add spinach, tomatoes, onion, and dressing; toss to wilt spinach.
