Maple-Lime Crispy Salmon
Pearl Couscous and Spinach-Tomato Salad

Ingredients
- 2 tsp lime zest
- 3 Tbsp lime juice
- ¼ cup maple syrup
- ¼ cup soy sauce
- 6 (8-oz) skin on salmon fillets
- 2 Tbsp olive oil
Instructions
- Combine lime zest, juice, syrup, and soy sauce in a large zip-top plastic bag. Add salmon, seal bag, and let stand 15 minutes.
- Remove salmon from marinade; discard marinade.
- Cook salmon, skin-side-up, in hot oil in a large skillet over medium-high heat 4 minutes; flip, and cook 3 to 4 minutes or to desired doneness.

- 1 (8.8-oz) pkg pearl couscous
- 1 (10-oz) pkg spinach
- 1 pint grape tomatoes, halved
- ¾ cup thinly sliced red onion
- ¼ cup balsamic vinaigrette
Side Dish Instructions
- Cook couscous according to package directions. Spoon into a large bowl. Add spinach, tomatoes, onion, and dressing; toss to wilt spinach.
