Chicken Pot Pie Mashed Potatoes
Biscuits and Apple Butter
Ingredients
- 1 Tbsp butter
- 1½ cups chopped rotisserie chicken
- ½ (15-oz) pkg frozen classic mixed vegetables
- 1 (10.5-oz) can cream of chicken soup
- 1½ cups chicken broth
- ½ (24-oz) container refrigerated mashed potatoes
Instructions
- Melt butter in a large skillet or saucepan over medium-high heat. Add chicken and vegetables; cook 3 minutes.
- Add soup and broth; bring to a boil. Reduce heat, and simmer 5 to 10 minutes or until thickened.
- Meanwhile, heat mashed potatoes according to package directions.
- Serve chicken pie filling over mashed potatoes.

- 2 frozen buttermilk biscuits
- 3 Tbsp country apple butter
Side Dish Instructions
- Bake biscuits according to package directions; serve with apple butter.
